Total cooking time: 45 minutes.
Instructions
- Melt the chocolate in a heatproof bowl over a pan of hot water
- Add the Fruit Flakes to the chocolate and stir
- Leave to cool
- Whisk the egg whites and lemon juice until they form soft peaks
- Add the sugar and continue to whisk until the egg whites form firm peaks
- Fold one-third of the egg whites into the chocolate mixture until well combined
- Carefully fold in the remaining egg whites, making sure to keep as much air in the mixture as possible
- Spoon or pipe the mousse mixture into a martini glass or bowl
- Chill in the fridge for 2-3 hours, or until set
- Serve with cream and a scattering of extra Fruit Flakes

- 2 packs (18g) Fruit Bowl Blackcurrant Fruit Flakes
- 170g good-quality dark chocolate (minimum 60% cocoa solids)
- 7 free-range egg whites
- ¼ tsp lemon juice
- 3 tbsp dark chocolate powder
- 40g caster sugar
