Strawberry Shortbread Frozen Yogurt

    Total cooking time: 45 minutes.

Servings: 6

You will need:
  • 2 packs (21g) Fruit Bowl Strawberry Yogurt Flakes
  • 550g strawberries
  • 500g Greek yogurt
  • 397g can condensed milk
  • 2 tsp vanilla bean paste or extract
  • 200ml double cream
  • 8 shortbread biscuits
  • 2 tbsp. freeze-dried strawberry pieces
Instructions
  1. Add 400g of the fresh strawberries (tops removed) into a food processor and blitz to a smooth puree
  2. Chop the remaining strawberries into small pieces and set aside
  3. Add the yogurt, condensed milk and vanilla to the processor and blitz again to combine
  4. Pour the cream into a bowl and lightly whip until it’s just holding its shape
  5. Add one third of the strawberry mixture to the cream and mix well
  6. Add the remaining strawberry mixture and chopped strawberries to the cream and lightly mix
  7. Pour half of the mixture into a freezer-proof container
  8. Scatter over half of the shortbread pieces, freeze-dried strawberries and 1 packet of Yogurt Flakes
  9. Pour the second half of the mixture over the top and follow the same method
  10. Freeze for at least 4 hours until solid
  11. Scoop into a bowl or ramekin and serve
